In My Kitchen in April

It's incredible that it's already April and signs of spring are in the air. The sakura are already blooming in Copenhagen and we've had a few warm and sunny days. However I think that the temperatures are due to drop again. In Finland at my mum's place it was still snowing this week. But before I forget, I want to share with you what's new in my kitchen.

Mikkeller botanical tonic is not so new, but it's still waiting for some special guests. Maybe we'll try it at Easter.


I find these Katjes unicorn sweets made with veggie gelatine so cute. I'm glad that they also made black unicorns. I sent these to my nephew and I think he liked them.


These Chipotles en adobo have become a frequently used item in my kitchen. It adds such a gentle heat to so many different dishes. Now it would be difficult for me to live without it.


I've been trying some new veggie products like PlantepΓΈlser, Pipfri and Veggie Bites. They are all very tasty and handy to use. I served the sausages with potato mash, cheese braised fennel and lambs lettuce. From the Pipfri I made cabbage and pepper tacos, where the red cabbage came as fried and pickled.







I've made again some homemade naan bread a few times, and it's always a great accompaniment to vegan curries.


These twice-baked leek and cheese potato skins are my go-to cold weather, cosy night in dish. It takes a little patience to bake the potatoes twice, but they are totally worth the wait.


I also cooked a halloumi, red pepper and pearled barley stew.

  1. Fantastic-looking dishes you made this month! Putting leeks in the twice-baked potatoes is a good idea (I love twice-baked potatoes, speed up the process by microwaving them for the first bake). The sausage plate is a little suggestive, though -- I assume it's that way as a kind of a joke.

  3. I like the idea of a craft soda and would love to get those black unicorn sweets for my daughter. I am interested to know if the packaging of your faux meat products avoids meat style names, given that the EU is proposing to ban such "blasphemous" use of the names! Your meals look delicious - I esp love the naan and potatoes but I am sorry to say my tinned chipotles have lingered in the fridge as I found them quite spicy and also a bit fussy to use.

I'm not sure what to think of that plan of banning the naming of veggie burgers and veggie sausages etc. I always find it a bit weird calling them by the meaty name, so it could be good, if new creative names will be around. Otherwise I just think it might be a bit of an unnecessary law, but what can you do.

  4. i love your naan bread and the unicorn sweets - so cute. i love chillies including chipotles. what did the veggie sausages taste like? meat? i always think it's a bit weird having veg products looking and tasting like meat. thanks for joining in this month. cheers sherry

    1. I don't really know anymore what meat tastes like, as I last had it as a child, so I can't really say. The sausages tasted savoury. I guess we would need a meat eater to compare. :)

  5. Veggie substitutes are getting tastier all the time. I'm curious about the pipfri, I haven't seen anything like that here. What was the base? Those twice baked potatoes would be my choice for a cool evening as well.

    1. Yes it's nice to see so many good new products. The pipfri is pea and wheat gluten based, mainly made from local Danish peas.

  7. Veg Hog, you always display such intriguing products, all of which I'd like to taste despite not being vegetarian or even close to vegan. (Love this forum and everybody's take on food -- we learn so much from each other!) Smiled at Mae's comment about your Plantepolser dinner... I didn't see it that way... recent inspirations on a similar-looking product were to smother them in sauerkraut and serve 'em "Chicago style" the next day. Loved your twice-baked potatoes and naan bread, too!
