Easter food

I had a wonderful Easter break last weekend. It was very relaxing with whole five days off work. It also snowed, which was quite interesting. The spring isn’t quite here yet. There was of course a lot of food so I wanted to share some of it with you. There was a roast dinner with a vegan loaf, but otherwise I tried to keep it a bit lighter with plenty of salads, like these bruschetta with olive and pepper tapenade and insalata caprese on the top.

Vegan loaf, onion gravy, marinated carrots and peppers, blood orange salad

Pasta salad with garlic olives and pine nuts

Plantbased potatoes dauphinoise with oat cream

Asparagus in a puff pastry, olive tapenade and Emmental wrap

Globe grapes

Have a nice weekend everyone!

Summer holiday

I had a very nice and relaxing holiday in Finland. It consisted mainly from countryside walks, Midsummer celebrations, garden work and spending time with the family. The nature was at its most beautiful with plenty of wild flowers blooming. The only downside were again the several insects that were out to get you. The nights were quite bright, but there were also a few spectacular sunsets that we got to experience.

I have collected some photos here to show to you. I hope you like them. You can find my food related souvenirs in this post.

Holiday in Finland

Here are a few photos from my countryside holiday at home. It was really hot throughout, so I actually didn't go to that many places. I would have preferred to have a few more walks, but it just wasn't possible in that weather. It's a shame for the plants and animals that it's this dry, but let's hope that they will get some rain soon. It seems to be a good year for butterflies though, which is nice.

Travel snacks

Am I the only one who is always starving when travelling? It doesn't matter, if I've just had a filling breakfast before the departure, latest after the airport security checks, I'm feeling peckish! Therefore I try to take all sorts of nice snacks with me, in case there isn't anything decent around to eat. My standard is salty popcorn, it fills me just suitably and gives me strength for a while.

But it doesn't all have to be unhealthy. Another favourite of mine is hummus with carrot sticks, however that's sometimes a bit too fussy or messy to have on the go. It's normally fine on trains that aren't too fully packed. Sometimes I'm even so organised that I bake homemade rolls for trips. Unfortunately that doesn't happen every time.

Last time when I was travelling I had these goodies in my bag: Veggie protein power by Graze, Candy Kittens' sweets, sea salted popcorn by Proper Corn and rice sticks by Munch. Especially these rice sticks were amazing, as they were also a new acquaintance for me. I will get them again for my approaching flight.

What are you snacking on when travelling?

Holiday mood

Good morning everyone! You probably already guessed it from the title and the too cheerful Monday morning greeting that I'm about to go on a holiday! Well I'm only going home to Finland, but it will be so good to see my family. It seems that it's still occasionally snowing over there, so that will be interesting for this time of year. I hope that you won't be having too much toil either, even if having just a regular working week.

So this was my breakfast bowl this morning, gathering strength and vitamins for the holiday. It's so nice to eat such colourful bowls of food, especially in the spring and summer. This bowl contained Greek yogurt, pineapple and strawberries.

I will be sharing some things from my Finland trip later. Remember still to take part in Eat Your Greens in April! I will be posting the round up from Finland, there's still one week to go!

Have a wonderful week!

Photos from Finland

Happy New Year! How did everyone get into the new year? Did you do anything nice? I spent the eve fairly quietly at home, and not quite realising yet that it's actually the new year.

I spent Christmas in Finland and wanted to share some of my photos from there with you. I just went home this time without any stops anywhere else, as the time was quite limited. There was only a little bit of snow, not quite covering the whole ground, but we still got into the Christmas spirit perfectly fine. It was icy, but not too cold, and I saw a few really nice sunsets.

We had quiet Christmas celebrations just with the closest family members, and did some of the traditions, like daytime sauna on Christmas Eve, rice pudding with hidden almond breakfast (finder of almond can make a wish), lighting candles on the graves of family members who have sadly passed away, watching the declaration of the Christmas peace from Turku... We also tried to tone down the overeating a bit this year and just made some of our favourites for dinner, like a chestnut and squash nut roast, creamy chanterelle sauce, onion gravy, fresh salads and potatoes.

I hope you like the photos.
