Cheesy oven sausages and baked potatoes

 

How are you all holding up? It seems like every day is the same and there is not much to do on the weekends apart from going on walks. We have now found fancy making a small campfire in the woods on our weekend walks. It’s quite nice to have a little break, light a warming fire and have snacks. We even bought a small axe for this purpose and it really is good fun. We’ve had a little bit snow and ice in Copenhagen this week, which is absolutely fantastic and all the lakes look so beautiful. It means we will soon be out and about today as well and just explore the icy city.

Before that I’ll make a quick food post. I made this very comforting dish of cheesy baked oven sausages with these newish vegan BBQ sausages. They were really good. The cheesy oven sausage is a classic 80s dish from my childhood, I just made a vegetarian version of it. I had cheesy baked potatoes, steamed brussels sprouts and salad on the side. It was a really nice winter dish and I can only recommend it.

Mac'n'cheese sandwiches


Did you have a nice Christmas time? I had a good and relaxing time with my family in Finland, where there was snow, so it looked really Christmassy. Now I'm back to the rather grey and rainy Copenhagen.

Tomorrow we will just have a relaxed vegan taco dinner at home and go out a bit when there are fireworks at twelve. Last year everyone was shooting their own fireworks around the lakes closeby, and that looked quite impressive, so that's where we will be heading again.

I recently made these very comforting mac'n'cheese sandwiches from left-over mac'n'cheese, and I could actually see these as New Year's eve food. The contrast between the toasted crispy bread and the cheesy soft macaroni was great. For some more flavour, I added green jalapenos and fried red bell peppers as an extra twist to the sandwich filling. I served a fresh salad and tomatoes on the side to make the dish feel slightly more healthy. These sandwiches made a great evening snack for this season, and I will surely make them again.

My ultimate comfort food cravings at the moment


I collected some of my current comfort food cravings to this post. I soon hope to move on to lighter and more spring like cooking, as hopefully also the weather will get a bit warmer, and there will be lovely spring vegetables on offer. This is just a collection of dishes that I've eaten quite often lately. They are all cheap eats and perfect for a chilled night in.

Mac'n'cheese

As the first recipe I will have to highlight mac'n'cheese, as it's always a good idea to make. I've made mine lately milk-free (but not vegan, still with cheese), and used the pasta cooking water in the roux instead. This method works rather well to make silky smooth roux as the base. I normally season it with smoked paprika, garlic granules, little bit of vegetable stock powder, salt and pepper. The base is almost tasty enough without any cheese.

I've used some chunkier pasta in my mac'n'cheeses lately, which also seems to work very well.


Lebanese rice

My faithful readers will probably know that I absolutely adore this vegan dish of Lebanese style rice, also called Lebanese dirty rice. I make it often, as it's convenient, tasty and affordable. It's a slow-cooked rice dish with lentils, vermicelli pasta, roasted onions and spices. You can read my first blog post about this rice here, and also get the full recipe there.

Sometimes in the past I've served this dish with halloumi, which fits in very well, and adds extra comfort. Halloumi seems to be less popular in Denmark. It's less available, and many brands tend to be too “goatish” or “sheepish” for me and especially for my partner, so we haven't had it much ever since we left the UK.


Thai curry

Thai curries have been a lot in my kitchen this winter and early spring. I've also posted a few of them, like this one here. I've mostly made a golden curry with tofu and variable veggies in a fragrant coconut milk based sauce. This dish is of course vegan, just like the Lebanese rice.


Homemade pizza

I've made a lot of pizzas lately, and I've also posted some of them. Here is one of them from last Friday with loads of cheese, tomato sauce, green olives and pineapple. These are basically my favourite toppings on a thin spelt crust (yes pineapple definitely belongs on a pizza!), but I also use other toppings.

I enjoy making the crust, waiting for it to raise and prepping the toppings in the meanwhile. It's a nice anticipation.

Mexican mac'n'cheese


Mac'n'cheese is certainly one of my favourite dishes, and I also like when it's slightly altered at times. I like the fairly new M&S ready meal, mac'n'cheese with leek and smoked cheese breadcrumbs, and recently one of my local burger places had truffle mac'n'cheese on offer (really really tasty!).

So that's how I thought that I could also try a new version of the classic in my kitchen. I wanted to go with Mexican spices, and what could've been a better choice than Gran Luchito smoked chilli paste as the base for the spicing. Feel free to use other brands, but I really like Gran Luchito at the moment.

My partner doesn't like milky and creamy sauces, so I whisked the cheese directly into chilli seasoned vegetable stock. I liked the end result of this recipe, soft macaroni smothered in cheese with a hint of chilli, just perfect for me. Try it, if you are a fan of mac'n'cheese and/or Mexican food!

Mexican mac'n'cheese
One large oven dish

Ingredients
300 g macaroni
1 onion
2 garlic cloves
1 small chilli
1 tbsp vegetable oil
1 tsp smoked chilli paste
Sprinkle of smoked paprika
Sprinkle of salt
Sprinkle of ground black pepper
200 ml vegetable stock
200 g grated emmental

Method

Cook the macaroni and set to side.

Chop the onion, garlic and chilli finely and cook them in vegetable oil until soft.

Mix in the seasoning and the smoked chilli paste.

Then add the vegetable stock and let it heat through.

Gradually start whisking in the grated cheese so that it melts into the mix. Use about 100 g of the cheese at this stage.

When the cheese mixture is smooth, mix it with the macaroni and put into an oven dish.

Cover with the rest of the cheese and bake at 180 C for about 15 minutes.
