Apple crumble

 

How are you all doing? It has been a while… I’m fine, but kind of busy. Denmark lifted all restrictions about a month ago and life has gotten pretty much back to normal. I’m commuting to work every day by train and there are no masks. It’s taking a little while adjusting back to the office life. I’m very drained in the evenings even though I get less work done in the office than at home. Well this is how it’s going to be for now unless something happens again.

I’ve been cooking a lot as usual, but not had much inspiration for blogging. I thought I would share this recent apple crumble with you, as I got these gorgeous Danish apples. It was so tasty. Apple crumble is one of my favourite desserts and it’s always good to make one in this season.

    Back in the office? I can continue working from home until I’ve had additional vaccines but lots of my colleagues are returning next week. I’m happier, and so much more productive, working from home I’ll be sorry when I have to start commuting again.

    1. Tell me about it! I didn't miss the full trains and buses and it seems quite odd to suddenly switch back to normal. I also was more productive when working from home, but if the company prefers that I do less, I can also go to the office. :)

  2. Good to hear about your progress with defeating the virus. We keep thinking about a return to normal, but as far as I'm concerned, there's no clear definition of _normal_ any more. Statistically in the US most people actually have been back at work for months or even over a year. Only the lucky few were able to work from home here.

    The crumble looks delicious. A few weeks ago, I made a peach/apple crumble in a baking dish that looks identical to yours. Perfect size for a small quantity.
