Squash dishes

 


Once again my apologies for being super quiet here on the blog. I am fine, but getting a little bit into that usual end of year busyness. I’ve been cooking a lot, but just didn’t find the time or energy for posting here. So now I decided to say hello and make a compilation post of my recent squash dishes, as I have been cooking a lot with squash.

I hope you are all fine. It would be nice to hear from you. Also tell me what is your favourite squash recipe. Here are some of my recent dishes.

Homemade ravioli with a chestnut and crown prince squash filling served with a brown soy butter, balsamic glazed cherry tomatoes and a glass of Prosecco.





Roasted pumpkin risotto with spinach.




Spicy squash burger with a homemade butternut squash patty.




Vegan oven stew with onion squash, butter beans, carrots, tomatoes and vegan sausages,


 

Here are some variations of squash soups. My favourite is a warming squash soup with Thai spices.





Pasta shells with squash and grill cheese.



Roasted butternut squash risotto with crispy sage butter and garlic bread on the side.




Tomato, carrot and squash soup with red lentils and heat of chilli.

  1. Thank you for some delicious sounding recipes, I have some large crown prince and similar home grown squash to use this winter. They keep very well but are huge for two people!

  4. Oh I love pumpkin recipes (which includes most of your "squashes") - seeing your pumpkin risotto reminds me how long it has been since I had this dish which I love. Pumpkin and lentil soup is a favourite here and pumpkin scones are childhood favourites. I was thinking of you the other day because Denmark seems to come up when talking about european countries with rising covid cases so it is good to hear you are ok - good luck with end of year busyness

    1. I didn't actually make a pumpkin risotto for a while either, but it's always so good. Pumpkin scones sound lovely too.

      Yes we have rising covid cases over here, but I have been lucky enough so far to avoid it. I hope that things are okay over there.

  5. Hello - those all look great and your ravioli is very impressive. I'm curious about the soup that has the bread cubes on top. It looks like french onion soup but I'm assuming it is squash based. Do you have a recipe for that? thanks.

    1. Hi, it is indeed a squash soup with some lentils, onion, garlic, vegetable stock and spices. I added some coconut aminos and cooked it a bit longer than usual, so it just got a bit more brown, but otherwise it's quite a basic soup. Thank you for stopping by!
