Sunday morning power bowl



The Hedgehog Awareness Week may officially be over, but hedgehogs that sadly are in decline, should always be on our minds. For today's breakfast I used my hedgehog shaped cookie cutter once again to make a quirky presentation for a very healthy bowl.

I used these ingredients for my breakfast bowl:

Pineapple
Red currants
Wild blueberry powder
Sea buckthornberry powder
Greek Yogurt

My week has been very busy so I felt like I wanted to start the relaxing Sunday with a healthy breakfast. I haven't had time for posting much this week, but I will try to write later about what I was up to yesterday.

Mixed fruit and berry smoothie

A fresh smoothie is always a great way to start the day and the possibilities are limitless. Lately I've made more of them, and always feel energetic and light all day after such a breakfast. I like making them in this season, because many fresh berries are still available. I've frozen some berries for later use, but the fresh and local ones are always the best.

Today I had these fruits and berries available for a smoothie:

1 passion fruit

1 apricot

6 strawberries

1 tsp sea-buckthorn powder

150 g Greek yogurt



Blend the ingredients together and enjoy the freshness of the smoothie.

5 breakfast bowls


For the start of a new week I want to introduce to you five different breakfast bowls that I've had recently. They are not all from last week as I also really like to have salty spelt, oat or barley porridge in the mornings. Also my weekend breakfasts tend to be more unhealthy than these.

So anyway, a nice bowl of yogurt with fresh berries and fruit, maybe granola or muesli is a very fine thing. At the moment I try to go for a fast paced walk in the park every morning, and when such a healthy breakfast awaits, it's just a wonderful feeling. Alone the looks of such bowls will make you feel cheerful.

Here are five different breakfast bowls that I assembled, but you can get really creative with this and use all your favourite ingredients. I find the berry powders a really good addition, as they are super healthy and add loads of taste.

I. Raspberries, sea-buckthorn powder, granola, yogurt


II. Mango, fig, yogurt



III. Blueberries, dried apple crisps, sea-buckthorn powder, yogurt



IV. Apricots, blueberries, granola, yogurt 
 

V. Pomegranate seeds, strawberries, yogurt

Sea-buckthorn and granola yogurt


When I'm not eating porridge for breakfast (which happens on most weekdays), I like to eat yogurt with granola and possibly some fruit with it. Adding sea-buckthorn berry powder to this combination makes the whole thing to a real power breakfast. It's of course even better, if you can obtain fresh sea-buckthorn berries. I always buy my sea-buckthorn berry powder in Finland and import it for my own use. This morning I had a lovely walk in the park first thing, and then had this breakfast with little coffee and juice. The weather is also great and now I feel like I can do anything!


150 g Greek yogurt
2 tsp sea-buckthorn berry powder
4 tbsp organic nutty granola

You don't need to do anything else than mix all the ingredients and enjoy!

Hello flaxseed my old friend!

Flax has been described as the wonder food or the most powerful plant in the world. It's supposed to have great health benefits and it contains many important components, such as Omega-3 essential fatty acids, Lignans and Fiber. Therefore in my opinion every vegan and vegetarian should try to include it into their diet. Read all about it here.





Today I started the day with a flaxseed yogurt. I put fresh blueberries into a cup, poured natural yogurt on it and sprinkled some milled flaxseed on the top: Quick and nutricious, and I even like the actual taste of flaxseed. Flaxseed can be obtained as oil as well but I tend to use organic milled flaxseed. I could easily have made this into a delicious smoothie as well. It's definitely worth a try next time.

You can use flaxseed in all sorts of vegetarian cooking. It's popular in baking, cereal bars, smoothies, you name it! In the internet you can find loads of different flaxseed recipes for vegetarians.
