Onion soup

 


It’s a proper onion soup weather now. It has been cold and icy here, so I’m always ready for a warming soup. I made this onion soup with organic dry cider, thyme and miso and it was so tasty. I added some cheesy bread croutons on top and dinner was ready.

  1. Cider is a great idea for onion soup. I made some last night with mushroom broth (from a good concentrate) and some added fried mushrooms.

  3. My boyfriend usually has the onion soup duties in our house, but looking at that recipe, I think I may have to take the wooden spoon from him this time and try your version!

    1. Do try it, it's a great way to spend an evening, as it takes quite a while to caramelise those onions.
