In my kitchen in June

 

Summer is here! It is getting warm in Denmark indeed, which is quite nice for a change. I have made many summer dishes and I’m going to share them in this post. On the top you can see vegan fish and chips, as I have detected a new excellent Danish vegan products by Rømer Vegan. I’ve tried their plantbased sausages, nuggets, burger patties and these wonderful fishless sticks. They are really nice quality products and there have been plenty of new vegan products about lately.






I’ve also found a new range of fresh pastas and this thick spaghetti is really great. I’ve had many pasta dishes this early summer like spaghetti aglio e olio with homemade garlic bread, spaghetti with tomato sauce and mozzarella (best pasta sauce also depicted) and pasta with creamy vegan courgette and tomato sauce.







I made some plastic-free purchases: two silicone baking mats, silicone ice-cube tray for making huge ice cubes, a bamboo trivet and nets for buying vegetables at the market. I’m using all of them actively and happy to reduce a bit of a plastic waste on my weekly market shop.






I made traditional Finnish potato pies in a rye crust.



This is a pasta bake with wild garlic and tomato.



And a veggie burger.

  1. Your pasta dishes look very delicious, and I admire your efforts to cut waste. The pandemic has derailed some of the efforts to cut back on single-use containers — fear of contagion, need to hire fewer workers who will be exposed, etc. And climate change may be galloping forward faster than we think. Brazilian forest destruction and all of that. So I wish your choices to avoid both plastic and meat could be a model to more people.

  2. Lovely looking dishes, as always. Your ice cube tray is great! I’m hoping to make ice cubes with flowers in this year - those big cubes would be perfect for them

    1. The ice cube tray is good, but the cubes don't fit to all glasses. That's how huge they are. Should be good for your purposes with the flowers too. :)

  3. that's great about reducing plastic waste. i've just bought some compostable clingfilm and i'm interested to see how that goes. lots of lovely things here veghog. and thanks heaps for putting up my IMK logo. Your potato pies look delicious!!

  4. Wow everything is looking great in your kitchen, love that vegan series with so many different varieties. I really adore the look of the Finnish potato pies - I'm going to look up how to make them :) do you have a good recipe?

      For the potato ones, you just substitute the rice pudding with a potato mash. Happy baking!

  5. I am amazed at the varieties of vegan foods available. Do you see a big increase in the number of vegans in Denmark? I know a lot of vegetarians and that seems to be on the rise here but not so much vegans. Anyway, I love all the choices you have.

    1. There really are many new vegan varieties available. Many Danes still eat meat, but I think that a lot of people want to eat more veg and are often choosing these options, but still allowing themselves the occassional meat or fish. Of course there are also many vegans and vegetarians.

  6. The Danish vegan products by Rømer Vegan look really good, esp. the sausages and fish. All you homemade food looks good too.

  7. Your meals look amazing - I am in awe of all the cooking you do and how beautifully you present it - that fish supper meal at the top is just so perfectly presented! I love your burger (did you purchase the sleeve?) and all that lovely pasta. The large ice cubes look like fun and nice for some summer drinks! Enjoy your warmer days.
