Lime and white chocolate cake with green jellies + blog anniversary


Vihreät Kuulat, these green jelly spheres on the cake, are a product that probably every Finn knows and every other Finn gets every year for Christmas. I read on Wikipedia that the manufacturer Fazer makes 17 million green jelly spheres every Christmas and there are only about 5 million Finns... so yes you may get the picture that they are pretty popular. By the way, they are suitable for vegetarians.



Ever since I saw this recipe for Finlandia lime and white chocolate cake on Fazer's webpage, I wanted to make it. The jellies on the top of the cake just looked so delicious and all other ingredients sounded nice too. I only never had the Finlandia jellies around, which are just like the green ones, but in different colours and flavours. Now that I got a box of green jellies for Christmas (what a surprise!), I thought that this is the perfect timing to bake this cake. I wanted to make a cake to mark my 3rd blog anniversary anyway, which happens to be today! Yayyyy, thank you so much for reading the blog, commenting, liking and sharing my posts and photos on social media. I really appreciate it so much, you are very close to my heart and I can't thank you enough! 

A blog anniversary gives me more motivation and a new boost for blogging and I have loads of recipe ideas and bookmarked recipes that I want to cook this year. Now I'm almost going to stay on the subject of eating greens, but in a bit different way (Please note that this is not my entry for Eat Your Greens!!). So for this cake I pretty much followed the recipe by Fazer, but wanted to translate it for you here. Have a look at how it was made.


Ingredients

150 g soft butter
1,5 dl sugar
3 eggs
3 dl wheat flour
2 tsp baking powder
2 tsp vanilla sugar
2 limes (zest + juice)
100 g white baking chocolate

For the topping:
Couple of cups icing sugar + about 3 tbsp lime or lemon juice or water
6 green jellies

Method

Melt the white chocolate in a water bath.

Grate the lime zest finely and press out the juice.

Whisk the soft butter and sugar into foam. Add the eggs to them and keep whisking.

Mix the wheat flour, baking powder and vanilla sugar in a separate bowl and add them to the whisked mix.

Whisk it all into an even dough and pour it into a cake form lined with non-stick baking paper.

Bake at 180 C for about 35-40 minutes and let the cake cool down.

Once the cake has fully cooled, you can continue with the decoration.

Mix icing sugar and juice or water together to make icing and pour it onto the cake.

Cut the green jellies into quarters (or some other jellies) and place them on the top of the cake.

Serve it with a good coffee and enjoy!

  3. what a delicious cake - happy blogiversary and that is great you will be cohosting eat your greens. I was also amused to see the little face off your blog header - I assume it is a hedgehog - is there a story about it?

    1. Thank you Johanna! I'm very excited about co-hosting Eat Your Greens and hoping to see many dishes from you as well. :)

      That is indeed a hedgehog cut from paper and there is a little story to it. I bought the kit for 4 woodland paper animals years ago and one sunny Sunday morning my partner and I started cutting and gluing the animals. That was a very serene process. Shortly after that I started the blog, took a photo of that paper hedgehog figure and decided to use it in my logo. :)
